Thanksgiving Food 2020

∇ Roasted turkey using this method

∇ The best make-ahead creamy mashed potatoes (I once made gallons of this for a wedding rehearsal dinner and they were a hit!)

∇ Roasted butternut squash, pureed with a little maple syrup, a dash of salt, and some butter (I used cultured vegan butter to make it dairy-free)

∇ No-knead dinner rolls (dough can be made ahead!)

∇ Broccoli salad (so many delicious versions of this)

∇ Corn Pie (an old family favorite, see recipe below)

New to me recipes this year:

Dairy-free mashed potatoes

Gluten-free rolls

Paleo stuffing

Paleo sweet potato casserole

Cranberry grape walnut salad

∇ Desserts this week include sweet potato pie, pecan pie, apple pie! The pie recipe I use is from I Am Baker-and I use good ol’ fashioned lard just as my favorite pie shops do!

RECIPES

Corn Pie
recipe from Debbie Humphrey

I can creamed corn
I can drained whole corn
1 box Jiffy corn muffin mix
1 stick butter, melted
8 ounces of sour cream
1/4 cup sugar
1/8 tsp salt

Mix together and pour into a lightly greased 9×13 dish.
Bake at 350 for approximately 30 minutes.

Green Green Salad
recipe from Crystal Paine at Money Saving Mom

Ingredients:
1 10 ounce pkg. frozen chopped broccoli, cooked & drained
1 green pepper, chopped
1 cucumber, seeded & chopped
1 can green beans, drained & chopped
1 can artichokes, drained on paper towel & chopped
1 can asparagus, drained, squeezed out & chopped
1 small jar pimentos (optional)*

Dressing:
1/2 cup half and half
1 cup mayonnaise (not Miracle Whip)
2 Tablespoons garlic salt (don’t skimp)
2 Tablespoons lemon juice

Stir dressing ingredients together and mix well into vegetables. Refrigerate overnight. Note: this will not taste good when you first mix it. It must sit at least overnight.

This is very good just by itself, but it also very good spooned over a lettuce salad with tomatoes and croutons. *The original recipe also included 1 medium onion, chopped, but we did not include this in our recipe served at the Tea Room.
